My Paris Trip: February 7-12, 2011. I just returned from a week
in Paris with my good friend Brian Hill who has two great
restaurants in Camden, Maine: Francine Bistro and Shepherd’s Pie.
If you are ever in the neighborhood I suggest you stop by and see
him. Brian and I worked and lived together a long time ago when
we were both coming up, and have a similar sense of food and
humor which makes him a great traveling companion. So we took on
Paris for a week of culinary adventure that included lunch and
dinner at different restaurants nearly every day, and found both
surprising disappointments and gratification along the way. View

Aaron Sanchez recently called the “fish tacos” at California
Modern the best reinvented classic he’s ever had on the Food
Network’s show “The Best Thing I Ever Ate.”

Trey was inspired to create this dish one day when he wondered
what would happen if you took a fish taco and turned it kind of
inside-out…if the fish became the actual “tortilla.” So he took
small slices of buttery raw yellowfin, dusted them with corn nuts
for a little toasted corn flavor and crunch, wrapped them around
diced tuna tartare, and placed them on top of fried pieces of
California Avocado with a cool creme sauce. If you haven’t tried
them, come have dinner at California Modern.
